Ingredients
- crushed tomatoes 800g
- garlic cloves 6
- extra virgin olive oil lots
- dried spaghetti 454g
- vegetable broth 1600g
- salt to taste
- black pepper to taste
Tools
- immersion blender
- large heavy-bottomed pan or cast iron skillet
- pot for boiling broth
- knife
- cutting board
- measuring cup
- tongs or pasta fork
Steps
- bring vegetable broth to a light boil in a pot and keep it hot throughout cooking
- blend crushed tomatoes with immersion blender until smooth
- mince garlic cloves finely
- heat lots of olive oil in large heavy-bottomed pan over medium-low heat
- cook minced garlic in oil until fragrant but not browned
- add blended tomatoes to pan and cook for a few minutes until hot while stirring until oil is a part of the sauce
- lay dried spaghetti on top of the tomato mixture in a single layer
- slowly add boiling broth in half-cup increments, allowing each addition to be absorbed
- flip pasta frequently to ensure even cooking and prevent sticking
- continue adding broth and flipping pasta until pasta is al dente and most liquid is absorbed
- turn heat to high and wait until pasta just starts to char on the bottom
- flip pasta to char the other side
- repeat charring process until desired crispy level is achieved
- season with salt and pepper to taste
