| Tapioca Pudding |
Ingredients
- tapioca pearls 36g
- water 236g
- milk 314g
- salt 1/8 teaspoon
- sugar 50g
- egg yoke 1
- egg white 1
- vanilla extract 1/2 teaspoon
Tools
- bread machine
- mixing bowls
- strainer
- whisk
Steps
- soak tapioca pearls in water for ~8 hours
- strain tapioca pearls from water
- add tapioca pearls, milk, and salt to bread machine
- select jam setting and start
- allow machine to run for 60 minutes and then cancel
- separate egg yoke
- whisk egg yoke, sugar, vanilla extract, and a small amount of the milk mixture until smooth
- add egg mixture to bread machine and select jam
- let machine run for 20-25 minutes and then cancel
- whisk egg whites to stiff peaks
- fold egg and milk mixture into whites
- serve
