Ingredients

• eggs 2
• salt 5 g (3/4 teaspoon)
• milk 35 g (2 tablespoons)
• all purpose flower 180-240g (1.5-2 cups)

Tools

• stand mixer
• rolling pin
• kitchen knife / dough scraper

Steps

• mix eggs milk and salt until smooth
• incorporated 120g of flour (1 cup)
• slowly add more flour until the dough comes together in a ball that is still slightly sticky
• place sticky dough on a floured surface
• kneed more flour into the dough until it is no longer sticky
• let rest for 10 minutes
• roll out dough to about 1/2 cm thickness
• cut dough into long strips
• dump noodles directly into boiling water
• boil until slightly tender
• serve
