Salmon Shishimi

Ingredients

  • salt 150g
  • sugar 70g
  • cold water 540g
  • salmon 2-3 fillets

Tools

  • mixing bowl

Steps

  • mix salt sugar and water in bowl until the salt and sugar are dissolved
  • add in frozen salmon and let sit for 2 hours in the fridge
  • move salmon to ziplock bags and place in a new bowl of water in the fridge for 6 hours to finish thawing
  • cut salmon into thin strips
