Rolled Pasta Dough 4 Sheets of Dough

Ingredients

  • semolina flour 300g 1
  • water 145g
  • salt 1/2 teaspoon

Tools

  • stand mixer
  • dough hook
  • pasta roller
  • damp linen towel

Steps

  • add flour and salt to stand mixer bowl and make a well
  • add water to the stand mixer
  • attach dough hook to stand mixer and mix on low
  • when the water is fully incorporated and the dough is crumbly pour out onto lightly floured surface
  • if the dough is too dry add water, if too wet add more flour
  • kneed dough until smooth
  • Cover with plastic wrap, a sealed container, or damp linen and let rest in the fridge for 30 minutes
  • split into 4 even sized balls
  • flatten out balls and then roll
