Ingredients

  • high fat cream (at least 40%) 500g
  • fresh lemon juice 10g

Tools

  • sauce pan
  • thermometer
  • cheese cloth
  • strainer

Steps

  • heat cream on low heat while stirring until it reaches 82°C
  • add lemon juice to cream and maintain temperature and stirring until it begins to thicken (a few minutes)
  • remove from heat and let rest for an hour
  • after resting strain through cheese cloth over large bowl and let drip dry for 1-2 days in fridge
  • discard contents of bowl and harvest remaining portion in cheese cloth
