Ingredients

- cold water 210g
- salt 25g
- malt 10g 1

- stand mixer
Steps
- punch down biga and kneed it into a ball
- mix biga, malt, and a little less than half the water on slow speed for 5 minutes or until the water is fully absorbed
- add salt and mix on fast for 4-5 minutes 2 periodically adding the rest of the water
- fold dough a few times then rest for 20 minutes 3
- separate dough into 6 ~280g balls
- rest for 1-2 hours at room temperature
