Makes X g of dough

Ingredients

  • all purpose flour 200g (7oz)
  • semolina flour1 200g (7oz)
  • eggs 4
  • water 15-30g (1-2 tablespoons)

Tools

  • stand mixer
  • beater

Steps

  • add flour to stand mixer bowl and make a well
  • add water and eggs to well
  • attach dough hook to stand mixer and mix on low for 2 minutes
  • form dough into a ball cover and let rest for 30 minutes before feeding into press
