## Ingredients

- [ ] high fat cream (at least 40%) 500g
|
|
- [ ] fresh lemon juice 10g
|
|
## Tools

- sauce pan
|
|
- thermometer
|
|
- cheese cloth
|
|
- strainer
|
|
## Steps
|
|
- heat cream on low heat while stirring until it reaches 82°C
|
|
- add lemon juice to cream and maintain temperature and stirring until it begins to thicken (a few minutes)
|
|
- remove from heat and let rest for an hour
|
|
- after resting strain through cheese cloth over large bowl and let drip dry for 1-2 days in fridge
|
|
- discard contents of bowl and harvest remaining portion in cheese cloth
|
|
|
|
