Makes 6 25 cm pizzas

Ingredients

  • cold water 210g
  • salt 25g
  • malt 10g 1

Tools

  • stand mixer

Steps

  • punch down biga and kneed it into a ball
  • mix biga, malt, and a little less than half the water on slow speed for 5 minutes or until the water is fully absorbed
  • add salt and mix on fast for 4-5 minutes 2 periodically adding the rest of the water
  • fold dough a few times then rest for 20 minutes 3
  • separate dough into 6 ~280g balls
  • rest for 1-2 hours at room temperature
