## Ingredients

- [ ] cold water 210g
- [ ] salt 25g
- [ ] malt 10g [^1]
## Tools
- stand mixer
## Steps
- punch down biga and kneed it into a ball
- mix biga, malt, and a little less than half the water on slow speed for 5 minutes or until the water is fully absorbed
- add salt and mix on fast for 4-5 minutes [^2] periodically adding the rest of the water
- fold dough a few times then rest for 20 minutes [^3]
- separate dough into 6 ~280g balls
- rest for 1-2 hours at room temperature
