Turnover Dough

Ingredients

  • all purpose flour 180g
  • salt 1/4 teaspoon
  • baking powder 1/2 teaspoon
  • butter 227g (16 tablespoons)
  • sour cream 113g

Tools

  • mixing bowl
  • whisk
  • rolling pin

Steps

  • mix flour, salt, and baking powder
  • cut butter into thin slices
  • mix butter into flour mixture until its uneven and crumbly, with large chunks of butter remaining
  • mix sour cream with flour mixture to form dough
  • place dough on well floured surface and kneed a few times
  • pat dough into rough square and roll into a rectangle approximately 20cm by 25cm
  • flour both sides of the dough and then fold into thirds on the shorter side
  • turn the dough 90° and roll the dough back into a rectangle 20cm by 25cm
  • fold the dough into thirds and then place in fridge for at least 20 minutes
