Tapioca Pudding

Ingredients

  • tapioca pearls 36g
  • water 236g
  • milk 314g
  • salt 1/8 teaspoon
  • sugar 50g
  • egg yoke 1
  • egg white 1
  • vanilla extract 1/2 teaspoon

Tools

  • bread machine
  • mixing bowls
  • strainer
  • whisk

Steps

  • soak tapioca pearls in water for ~8 hours
  • strain tapioca pearls from water
  • add tapioca pearls, milk, and salt to bread machine
  • select jam setting and start
  • allow machine to run for 60 minutes and then cancel
  • separate egg yoke
  • whisk egg yoke, sugar, vanilla extract, and a small amount of the milk mixture until smooth
  • add egg mixture to bread machine and select jam
  • let machine run for 20-25 minutes and then cancel
  • whisk egg whites to stiff peaks
  • fold egg and milk mixture into whites
  • serve
