Tikka Masala Gravy

Ingredients

  • onions 2
  • tomatoes 3
  • water 1.5 cups
  • garlic 3 to 5 cloves
  • fresh ginger
  • red chili powder
  • garam masala
  • salt
  • sugar
  • fenugreek
  • coriander
  • sumac ground
  • olive oil

Tools

  • pot
  • blender
  • mordar and pestle

Steps

  • dice onions finely
  • dice tomatoes into large chunks
  • grease pot with a tablespoon of oil and heat on medium
  • caramelize onions in pot
  • add tomatoes, salt, and sugar, and continue to cook until the tomatoes are mushy
  • stir in red pepper and garam masala and cook until you can smell the spices (around 2 minutes)
  • let ingredients cool before adding to blender with 3/4th cup of water
  • puree ingredients until smooth
  • grind garlic and an equal amount of fresh ginger with a splash of oil until it forms a paste
  • grease pot and fry ginger and garlic paste on low for 1 to 2 minutes
  • add puree to the pot and season to taste
  • add 3/4th cup of water to pot and reduce until the gravy thickens
  • garnish with fenugreek
