--- title: English Muffins draft: true --- # Makes 6-8 ### notes - [recipe](https://www.kingarthurbaking.com/recipes/bread-flour-english-muffins-recipe) - use bread machine to stir ## Ingredients - [ ] milk 198 g - [ ] butter 21 g - [ ] salt 4.5g (3/4 teaspoons) - [ ] sugar 17 g - [ ] eggs 1 - [ ] bread flour 270 g - [ ] active dry yeast 3g (1 teaspoons) - [ ] semolina flour ## Tools - ??? ## Steps - combine all ingredients other then semolina flour in mixing bowl - let dough rise until it is very puffy (1 - 2 hours) - cover griddle with non stick vegetable spray and then cover with semolina flour - gently deflate the dough, and divide it into 16 pieces. Shape each piece into a smooth ball, then flatten the balls until they're about 3" to 3 1/2" in diameter - place cooking rings on parchment paper sprinkle semolina into cooking rings place dough balls into rings and then sprinkle semolina flour on top - let dough reset for 20 minutes - heat griddle on low heat then transfer rings onto griddle - cook muffins for 7 to 15 minutes per side.
