--- title: Angel Food Cake --- ## Ingredients - [ ] all purpose flour 120g - [ ] sugar 298g - [ ] egg whites 425g (~12 eggs) - [ ] salt - [ ] vanilla extract - [ ] cream of tarter ## Tools - tube pan - mixing bowls ## Steps - preheat oven to 325 °F - mix flour and 190g of sugar - in a separate bowl whisk egg whites, vanilla extract and salt until the eggs are slightly frothy - add cream of tarter to the egg mixture and beat to stiff glossy peaks - slowly add in sugar - fold in flour and sugar mixture until incorporated - scoop batter into cake pan and smooth - place pan in oven until the top of the cake springs back from a light touch, around 40-45 minutes - place pan upside down on a cooling rack for 1.5 hours - gently remove from pan with a spatula or other soft implement - serve #recipe/dessert #diet/vegetarian
