--- title: "Rolled Pasta Dough" draft: true --- # Makes 4 Sheets of Dough ## Ingredients - [ ] semolina flour 300g [^1] - [ ] water 145g - [ ] salt 1/2 teaspoon ## Tools - stand mixer - dough hook - pasta roller - damp linen towel ## Steps - add flour and salt to stand mixer bowl and make a well - add water to the stand mixer - attach dough hook to stand mixer and mix on low - when the water is fully incorporated and the dough is crumbly pour out onto lightly floured surface - if the dough is too dry add water, if too wet add more flour - kneed dough until smooth - Cover with plastic wrap, a sealed container, or damp linen and let rest in the fridge for 30 minutes - split into 4 even sized balls - flatten out balls and then roll [^1]: all purpose flour can be used instead but is much harder to form into a balls #recipe/ingredient #diet/vegan #diet/vegetarian
