--- title: "Philadelphia" --- ## Ingredients - [ ] whole milk 500g - [ ] fresh lemon juice 20g ## Tools - sauce pan - thermometer - cheese cloth - strainer ## Steps - heat milk on low heat while stirring until it reaches 82°C - add lemon juice to milk and maintain temperature and stirring until it begins to thicken (a few minutes) - remove from heat and let rest for an hour - after resting strain through cheese cloth over large bowl and let drip dry for 1-2 days in fridge - discard contents of bowl and harvest remaining portion in cheese cloth #recipe/ingredient #diet/vegetarian
