--- title: Alfredo Sauce makes: 2 quarts --- ## Ingredients - [ ] green onion 1 bushel - [ ] olive oil 200g - [ ] butter 100g - [ ] heavy cream 750g - [ ] parmesan 550 g - [ ] chicken/mushrooms [^1] - [ ] spinach 1 thing - [ ] garlic 3 cloves - [ ] nutmeg to taste - [ ] black pepper to taste - [ ] oregano test - [ ] basil test - [ ] rosemary test ## Tools - frying pan - cutting board - knife - sauce pan - pan with lid - wood spoon - whisk - cheese grater ## Steps - shred parmesan - wilt spinach - fry chicken/mushrooms - chop green onions into thin slices - melt butter in sauce pan - add olive oil and chopped green onions to sauce pan - fry green onions until translucent? - turn heat to low, add cream to sauce pan and whisk together till oil emulsifies, continue to stir periodically to prevent burning - once cream is up to temperature, remove heat and add parmesan while stirring until fully incorporated - add in nutmeg and black pepper - mix in spinach and mushrooms #recipe/dinner #diet/vegetarian/optional [^1]: lions mane really good for this, crimini is a close second
