--- title: Egg Noodles --- ## Ingredients - [ ] eggs 2 - [ ] salt 5 g (3/4 teaspoon) - [ ] milk 35 g (2 tablespoons) - [ ] all purpose flour 180-240g (1.5-2 cups) ## Tools - stand mixer - rolling pin - kitchen knife / dough scraper ## Steps - mix eggs milk and salt until smooth - incorporated 120g of flour (1 cup) - slowly add more flour until the dough comes together in a ball that is still slightly sticky - place sticky dough on a floured surface - kneed more flour into the dough until it is no longer sticky - let rest for 10 minutes - roll out dough to about 1/2 cm thickness - cut dough into long strips - dump noodles directly into boiling water - boil until slightly tender - serve #recipe/ingredient #diet/vegetarian
