# Makes 1 9x9 dish of Tiramisu
### notes 
- try micro planning dark chocolate and annis into mascarpone mixture
## Ingredients 
- [ ] eggs 3
- [ ] caster sugar 100g
- [ ] mascarpone 500g
- [ ] strong black coffee 200ml
- [ ] rum 42g (1 shot) [^1]
- [ ] savioardi biscuits/lady's fingers 20-24
- [ ] coca powder
## Tools 
- whisk
- mixing bowls 3
- baking pan
## Steps
- separate eggs
- whisk together egg yokes and sugar
- mix in mascarpone to egg yoke mixture
- whisk egg whites to soft peaks
- gently mix together both mixtures
- layer biscuits dunked in coffee and egg mixture in dish
- dust top with coca powder
