--- title: "Tapioca Pudding" draft: true --- # Makes X ??? ### notes - ??? ## Ingredients - [ ] tapioca pearls 36g - [ ] water 236g - [ ] milk 314g - [ ] salt 1/8 teaspoon - [ ] sugar 50g - [ ] egg yoke 1 - [ ] egg white 1 - [ ] vanilla extract 1/2 teaspoon ## Tools - bread machine - mixing bowls - strainer - whisk ## Steps - soak tapioca pearls in water for ~8 hours - strain tapioca pearls from water - add tapioca pearls, milk, and salt to bread machine - select jam setting and start - allow machine to run for 60 minutes and then cancel - separate egg yoke - whisk egg yoke, sugar, vanilla extract, and a small amount of the milk mixture until smooth - add egg mixture to bread machine and select jam - let machine run for 20-25 minutes and then cancel - whisk egg whites to stiff peaks - fold egg and milk mixture into whites - serve #recipe/dessert #diet/vegetarian
