+## Ingredients 
+- [ ] whole milk 500g
+- [ ] fresh lemon juice 20g
+## Tools 
+- sauce pan
+- thermometer
+- cheese cloth
+- strainer
+## Steps
+- heat milk on low heat while stirring until it reaches 82°C
+- add lemon juice to milk and maintain temperature and stirring until it begins to thicken (a few minutes)
+- remove from heat and let rest for an hour
+- after resting strain through cheese cloth over large bowl and let drip dry for 1-2 days in fridge
+- discard contents of bowl and harvest remaining portion in cheese cloth
